Vegetable Manchurian SOUP

Vegetable manchurian SOUP

Ingredient for manchurian pakodas

1 cup finely chopped cabbage
1 cup finely chopped carrots
1 cup finely chopped bell peppers
2 tbsp of corn starch or all purpose flour
1 tbsp chilli sauce
1 tsp of finely chopped ginger and garlic
1 tsp of soy sauce or to taste
Salt and pepper to taste
Cup of Bolied and slightly mashed rice (optional)
oil for deep frying

Method for pakodas

Combine all the chopped vegetables and steam them in steamer or in a pot with little water for 10-15 minutes until little tender.
Remove the vegetables from heat and put them in a musslin cloth and squeeze out the water as much as you can, reserve the extracted water from the veggies for later use as broth.
Put veggies in a bowl add all the remaining ingredients and mix well and start forming small round balls,

make sure there's no moisture in the mixture if there is add more corn starch or all purpose flour for binding.

Heat oil and add the balls to the oil for frying until golden brown, make sure u fry one ball first to see it doesn't separate in the oil.

Ingredient for manchurian soup

1/2 cup finely chopped onions
1 cup of finely chopped veggies (peas, carrots, cabbage)
1 tablespoon of finely chopped ginger and garlic
1 tbsp of soy sauce
1 tbsp of chilli sauce
1 tsp of vinegar
1 tsp of tomato ketchup
Salt and pepper to taste
1/2 cup finely chopped spring onions
4-5 cups of water or veggie broth
Tsp of oil

Method for soup

Heat oil in large heavy bottom pan, add onion and ginger, garlic to the oil and sauté until translucent,

now add the veggie and cooks on low flame until nice and carmalised,

add all the other ingredient except the spring onions and cron starch mixture and water or broth,

mix well and cook for 1-2 minutes, now add the water or stock including the one we had reserved from pakodas.

now let the soup come to boil and see the consistence of soup if it needs any corn starch mix for thickening,

lastly just before serving add the pakodas and boil the soup and add spring onions and serve hot.
